What you need
- 6 to 8 ripe tomatoes (mulit color make it very pretty)
- 1 red onion sliced very thin
- 1 clove of garlic finely chopped
- 1/2 cup extra-virgin olive oil
- 4 tablespoons balsamic vinegar
- 1 tablespoon of coconut sugar
- 1 tablespoon of dried oregano
- Salt and freshly ground black pepper
- 12 fresh basil leaves, cut into think ribbons
What you do
- Cut the tomatoes into 4 wedges, then cut the wedges in half and add to a bowl.
- Add to the tomatoes, onion and garlic to a large bowl.
- Add the olive oil, balsamic vinegar, coconut sugar, oregano, dash of salt and pepper to a jar. Screw on the lid and shake to combine. Pour the dressing over the tomatoes and toss.
- Add the basle and gently toss to combine.
- Cover and refrigerate for an hour or so .
- Remove from the fridge and allow to come to room temperature before serving
