What you need
  1. 6 to 8 ripe tomatoes (mulit color make it very pretty)
  2. 1 red onion sliced very thin
  3. 1 clove of garlic finely chopped
  4. 1/2 cup extra-virgin olive oil
  5. 4 tablespoons balsamic vinegar
  6. 1 tablespoon of coconut sugar
  7. 1 tablespoon of dried oregano
  8. Salt and freshly ground black pepper
  9. 12 fresh basil leaves, cut into think ribbons
What you do
  1. Cut the tomatoes into 4 wedges, then cut the wedges in half and add to a bowl.
  2. Add to the tomatoes, onion and garlic to a large bowl.
  3. Add the olive oil, balsamic vinegar, coconut sugar, oregano, dash of salt and pepper to a jar. Screw on the lid and shake to combine. Pour the dressing over the tomatoes and toss.
  4. Add the basle and gently toss to combine.
  5. Cover and refrigerate for an hour or so .
  6. Remove from the fridge and allow to come to room temperature before serving
