For the Balsamic Reduction
  1. 1 1/2 cups balsamic vinegar
  2. 1/4 to 1/2 cup of brown sugar (to your liking)
For the Salad
  1. Large water mellon cut into 4″ x 4″ squares – rind removed
  2. Pine nuts lightly toasted
  3. Crumbled goat cheese
Make the balsamic reduction
  1. Bring vinegar to a boil, turn down the heat and let it simmer.
  2. When it reduces halfway, add brown sugar.
  3. Simmer some more until it becomes syrupy and sticks to the back of a wooden spoon. As it cools it will thicken up.
  4. Store leftovers in fridge.
Assemble the salad right before serving
  1. Arrange the watermelon on a bead of greens
  2. Drizzle with the balsamic reduction
  3. Add the toasted pine nuts
  4. Sprinkle with goat cheese
