What you need
  1. 1/2 cup of fresh mushrooms
  2. 1 bag of fresh spinach
  3. 1/4 cup chopped onions
  4. 1 tablespoons chopped garlic
  5. 2 tablespoons of butter
  6. 9 eggs
  7. 3 tablespoons of 1/2 and 1/2
  8. Salt and pepper to taste (go light on the salt goat cheese is salty)
  9. 3 oz goat cheese
What you do
  1. Adjust top oven rack – with a iron skillet (ovenproof!) on it, you want the top of the skillet to be 4-6 inches from the broiler. Turn on broiler.
  2. Put skillet (preferably 12″ nonstick) on stove and add the butter
  3. Add the vegetables and garlic, and saute them until done.
  4. Whisk eggs with salt, pepper, and 3 Tablespoons of half and half, or cream.
  5. Add the eggs mixture to skillet.
  6. On medium heat, cook eggs for about 2 minutes, scraping the sides and bottom with heat-resistant spatula.
  7. When eggs are mostly cooked but still very wet, stop stirring and sprinkle in the goat cheese.. You want to see cooked egg scattered throughout, but loose egg in between.
  8. Continue cooking on stove for another minute so underside sets.
  9. Sprinkle the rest of the cheese on top.
  10. Put skillet under broiler. Watch carefully while top browns. This will take 2-4 minutes
  11. Remove skillet from oven and let sit for about 5 minutes to finish cooking in center.
  12. Cut in wedges and serve.
