For the Spice Rub
  1. 2 tablespoons of smoked paprika
  2. 1 tablespoon if course sea salt
  3. 1 tablespoon of chili powder
  4. 1 tablespoon of ground cumin
  5. 1/2 tablespoon ground black pepper
  6. 1/2 tablespoon dried ground oregano
  7. 1.2 tablespoon ground white pepper
  8. 1 teaspoon cayenne pepper
For the meat
  1. 2 pounds bone in pork shoulder
  2. 1/4 cup of water
What you do
  1. In a small bowl, combine all the rub ingredients and mix well
  2. Massage the rub all over the meat
  3. Wrap tightly in a double layer plastic wrap and refrigerate for at least 3 hours and up to 48 hours (the more the better!)
  4. Unwrap the meat and place it in a dutch oven or slow cooker
  5. Add the water.
  6. If using the slow cooker, cook on low for 8-10 hours.
  7. If using a dutch oven, preheat oven to 225 and cook for 8-10 hours.
  8. With the pork still in slow cooker or Dutch oven, use a two forks to pull it apart.
