For the Spice Rub
- 2 tablespoons of smoked paprika
- 1 tablespoon if course sea salt
- 1 tablespoon of chili powder
- 1 tablespoon of ground cumin
- 1/2 tablespoon ground black pepper
- 1/2 tablespoon dried ground oregano
- 1.2 tablespoon ground white pepper
- 1 teaspoon cayenne pepper
For the meat
- 2 pounds bone in pork shoulder
- 1/4 cup of water
What you do
- In a small bowl, combine all the rub ingredients and mix well
- Massage the rub all over the meat
- Wrap tightly in a double layer plastic wrap and refrigerate for at least 3 hours and up to 48 hours (the more the better!)
- Unwrap the meat and place it in a dutch oven or slow cooker
- Add the water.
- If using the slow cooker, cook on low for 8-10 hours.
- If using a dutch oven, preheat oven to 225 and cook for 8-10 hours.
- With the pork still in slow cooker or Dutch oven, use a two forks to pull it apart.
