What you need
  1. 4 tablespoons of bacon fat
  2. 3 pounds of onions, sliced
  3. 2 cups of organic chicken broth
  4. 4 cups of organic beef broth
  5. 6 sprigs fresh thyme
  6. 3 sprigs fresh rosemary
  7. 3 bay leaves
  8. 2 teaspoons course sea salt (more to taste)
  9. 2 teaspoons fresh black pepper
Caramelize the onions
  1. Preheat the oven to 325
  2. Grease the dutch oven with 2 tablespoons of the bacon fat
  3. Place the onions in the slow cooker and pour the remaining 2 tablespoons of the bacon fat over over the top
  4. Cover and cook on high for 6-8 hours, stirring every 2 hours while the onions caramelize
  5. Add both broths, thyme, bay leaves, salt and pepper and stir well
  6. Cover and put back in oven for another 3-4 hours.
  7. Taste the soup and add additional salt to taste if needed
  8. Remove herbs from soup before serving.
