What you need
  1. 1 beef tenderloin — fully trimmed
  2. 4 cloves of garlic Sliced
  3. 3 tablespoons of Extra Virgin Olive Oil
  4. Kosher Salt and freshly ground black pepper to taste
What you do
  1. Slice the garlic
  2. Make small slits around the filet and stick the garlic into the slits and rub the oil all over.
  3. Cover the tenderloin with plastic wrap and refrigerate for 2 hours or overnight.
  4. Preheat the oven to 500°F.
  5. Remove the plastic wrap and season the meat with salt and pepper. Place the filet in a roasting pan and cook for 15
  6. minutes. (This gives you a nice crust on the outside.)
  7. Reduce the heat to 450°F.
  8. Continue cooking for another 15 to 20 minutes.
  9. Slice into the steak to check for desired doneness, or use a cooking thermometer (140 to 150°F is medium-rare).
  10. Let the beef rest for 10 minutes before slicing.
