What you need
- 3 sweet potatoes, peeled
- 4 TBS coconut oil, divided
- 2 TBS minced fresh sage, divided
- 1 TBS fresh rosemary, divided
- 1 tsp coarse sea salt
- 1 tsp freshly ground black pepper
- ½ pound beef
- ½ pound ground pork
- ½ tsp garlic powder
- walnuts for garnish
What you do
- preheat oven to 350 degrees
- Using spiral slicer, cut sweet potatoes into noodles
- Heat 2 TBS of the coconut oil in a large sauté pan over medium-low heat.
- Add noodles along with 1 TBS of the sage, ½ TBS of the rosemary, the salt and the pepper.
- Toss the noodles to coat them in the coconut oil and let them cook down for 10-15 minutes, stirring every couple of minutes to keep them from sticking.
- When noodles are soft and slightly browned, remove the pan from heat.
- In a large bowl, mix together the ground beef, ground pork, remaining 1 TBS of sage, remaining ½ TBS of rosemary, the garlic powder, and pinch of salt and pepper.
- Use a large cookie scoop or ice cream scoop to form the meat into 18 meatballs.
- Heat the remaining 2 TBS of coconut oil in a large cast iron skillet (I used a regular skillet) over medium-high heat.
- Add the meatballs and cook on all sides for 2-3 minutes, until they are slightly browned.
- Transfer meatballs to a 9 x 13 baking dish and bake for 10 minutes.
- Serve with meatballs over the cooked sweet potato noodles
- Garnish with walnuts
