What you need
- 1 8oz pkg cream cheese – room temp.
- 2 Sticks of unsalted butter – room temp.
- 1/4 cup granulated sugar
- 1/4 teaspoon of salt
- 1 teaspoon vanilla extract
- 2 cups of all purpose flour
- 6 tablespoons of sugar
- 1/4 cup light brown sugar – packed
- 1/2 teaspoon of ground cinnamon
- 3/4 cup raisins
- 1 cup walnuts, finely chopped
- 1 egg beaten
- 1 tablespoon of milk
- 1 teaspoon ground cinnamon
- 3 tablespoons of granulated sugar
What you do
- On med. speed – cream butter and cream cheese
- Add 1/4 cup granulated sugar, the salt & vanilla
- On Low speed add in flour until just incorporated
- Roll dough into a ball. Cut the ball in quarters & wrap each in plastic wrap, refrigerate for 1 hour
- For filling, combine 6 tablespoons of granulated sugar, the brown sugar, 1/2 teaspoon of cinnamon, the raisins, and walnuts
- Roll each ball of dough into a 9-inch circle. Spread the dough with 2 tablespoons of apricot preserves and sprinkle with 1/2 cup of the filling
- Cut the circle into 12 equal wedges (see photos)
- Start with the wide edge, roll up each wedge (see photos). Place cookies, points tucked under, on a baking sheet lined with parchment paper. Chill for 30 mins
- Preheat the oven at 350 degrees
- Combine 3 tablespoons of granulated sugar and 1 teaspoon of cinnamon
- Mix the egg and the tablespoon of milk to create the egg wash
- Brush each cookie with the egg wash and sprinkle with the sugar mixture.
- Bake cookies for 15-30 mins. until lightly browned
