For the Cupcakes
- 1 box of white cake mix - I prefer super most Pillsbury white
- 1 cup of butter milk
- 1/3 cup of vegetable oil (if the cake mix box calls for more or less oil - use the amount on the box)
- 4 eggs
For the Vanilla Butter-cream Frosting
- 1 cup (2 sticks) unsalted butter (very soft but NOT melted)
- 8 cups confectioners sugar
- 1/2 cup milk
- 2 teaspoons of vanilla extract
To make the cupcakes
- Preheat the oven to 350
- Line the muffin cups with paper liners
- Put the cake mix in your mixing bowl
- Add in the buttermilk, vegetable oil and eggs
- Beat until moistened – about 30 seconds
- Increase the speed to high and beat until thick – about another 2 mins
- Spoon the mix into the liners filling the cups about 2/3 of the way to the top.
- Bake for 15-20 mins – until a toothpick poked into the cupcake centers comes out clean.
- Remove the cupcakes from the baking plans and allow to cool completely before frosting.
To make the frosting
- Place the butter in a large mixing bowl
- Add 4 cups of sugar, milk and vanilla extract
- Beat until smooth and creamy
- Slowly add the remaining sugar, 1 cup at a time until it’s a good spreading consistency (you might not need all the sugar)
- If you want to colored icing – add a few drops of color and mix thoroughly.
- Frost the cupcakes (don’t refrigerate the icing because it will set)
