For the Salad
- 6 cups packed baby spinach
- 2 pears sliced
- 1/2 cup pomegranate seeds
- 1/2 cup crumbled gorgonzola cheese
- 1/2 cup pecan halves
For the Orange Poppyseed Vinaigrette
- 2/3 cup fresh orange juice
- 1/2 cup extra virgin olive oil
- 2 tablespoons dijon mustard
- 2 tablespoon apple cider vinegar
- 1/4 teaspoon salt
- 2 tablespoons poppyseed
- 2 tablespoon honey
For the salad
- Add the spinach to a large bowl and layer the remaining ingredients on top.
For the Orange Poppyseed Vinaigrette
- Add all ingredients to a medium size jar.
- Tighten the lid and shake until thoroughly mixed.
- Drizzle over salad.
- Toss to combine.
- Serve immediately and enjoy!
