What you need
  1. 1 cup peanut butter
  2. 1 cup butter – softened
  3. 1 cup of sugar
  4. 1 cup of packed brown sugar
  5. 1 teaspoon baking powder
  6. 1 teaspoon baking soda
  7. 1 teaspoon ground ginger
  8. 1/2 teaspoon salt
  9. 2 eggs
  10. 1 teaspoon vanilla
  11. 2 1/2 cups flour
  12. 1/4 cup finely chopped crystallized ginger
  13. 2 tablespoons of sugar
What you do
  1. Preheat the oven to 375°
  2. In a large bowl, beat peanut butter and butter for 30 seconds
  3. Add granulated sugar, brown sugar, baking soda, baking powder, ground ginger and salt until light and fluffy.
  4. Beat in eggs and vanilla.
  5. Add in flour and crystallized ginger.
  6. Using 1 teaspoon of dough, make a ball and roll it in granulated sugar.
  7. Flatten each ball with a fork, making 2 impressions in the cookies.
  8. Bake for 9-11 mins.
