What you need
- 2 sticks unsalted butter ~ softened
- 2/3 cup packed brown sugar
- 1/2 teaspoon vanilla
- 2 3/4 cups all-purpose flour
- 1/4 cup whipping cream
- 1 teaspoon of hazelnut extract
- 2 egg whites, lightly beaten
- 1 cup finely chopped hazelnuts
- Peach jam (the good stuff)
- 1 cup Powered sugar
- 2 teaspoons of water
What you do
- Preheat oven to 375.
- On med. high speed β beat butter for 1 minute.
- Beat in brown sugar and hazelnut extract.
- Add in 1/2 the flour and 1/4 cup whipping cream.
- Beat in the remaining flour on low speed until just incorporated.
- Line the cookie-sheets with parchment paper
- Shape the dough into 1 inch balls
- Roll balls in egg whites and roll in the hazelnuts
- Using your thumb make an indentation in each ball
- Bake for 8 mins. until the bottoms are lightly brown
- While still warm, re-press the indented centers with a teaspoon
- Fill indentations with the peach jam
- Meanwhile, in small bowl, mix powdered sugar and water until smooth.
- Remove cookies from cookie sheets to cooling racks. Cool 3 minutes.
- Drizzle powered sugar mixture over warm cookies.
