What you need
  1. 1 Head Cauliflower
  2. 1 Medium Onion
  3. 4 Sprigs Fresh Thyme
  4. 4 Fresh Unpeeled Garlic Cloves
  5. Kosher Salt
  6. Fresh Ground Pepper
  7. 1/2 Cup Parmesan
What you do
  1. Preheat oven to 425°.
  2. Cut 1 head cauliflower into florets
  3. Toss on a large rimmed baking sheet with 1 sliced medium onion, 4 thyme sprigs, 4 unpeeled garlic cloves, and 3 tablespoons olive oil;
  4. season with kosher salt and freshly ground black pepper.
  5. Roast, tossing occasionally, until almost tender, 35-40 minutes.
  6. Sprinkle with 1/2 cup grated Parmesan, toss to combine, and roast until cauliflower is tender, 10-12 minutes longer.
