What you need
- 1½ pounds fresh red jalapeño peppers, stemmed, seeded, and roughly chopped
- 8 garlic cloves, peeled and smashed
- ⅓ cup apple cider vinegar
- 3 tablespoons Paste Tomato
- 3 tablespoons Organic Honey
- 2 tablespoons Paleo-friendly Red Boat Fish Sauce
- 1½ teaspoons kosher salt
What you do
- Cut the peppers and remove the seeds.
- Add all the ingredients into a high speed blender
- Purée until smooth
- In a medium sauce sauce pan, over high heat bring the purée to a boil.
- As soon as it boils, reduce the heat to low and maintain a simmer for 5 to 10 minutes, stirring occasionally.
- When the foam subsides and you don't smell any more "raw vegetables" off the heat.
- Taste and adjust for seasoning if necessary
- Transfer to a mason jar and allow the sauce to cool
- Keep it in the fridge for up to a week
