What you need
  1. 1½ pounds fresh red jalapeño peppers, stemmed, seeded, and roughly chopped
  2. 8 garlic cloves, peeled and smashed
  3. ⅓ cup apple cider vinegar
  4. 3 tablespoons Paste Tomato
  5. 3 tablespoons Organic Honey
  6. 2 tablespoons Paleo-friendly Red Boat Fish Sauce
  7. 1½ teaspoons kosher salt
What you do
  1. Cut the peppers and remove the seeds.
  2. Add all the ingredients into a high speed blender
  3. Purée until smooth
  4. In a medium sauce sauce pan, over high heat bring the purée to a boil.
  5. As soon as it boils, reduce the heat to low and maintain a simmer for 5 to 10 minutes, stirring occasionally.
  6. When the foam subsides and you don't smell any more "raw vegetables" off the heat.
  7. Taste and adjust for seasoning if necessary
  8. Transfer to a mason jar and allow the sauce to cool
  9. Keep it in the fridge for up to a week
