What you need
  1. 1/2 cup coconut flour, sifted
  2. 1 teaspoon ground cinnamon
  3. 1/2 teaspoon ground nutmeg
  4. 1/4 teaspoon ground cloves
  5. 1/2 teaspoon baking soda
  6. 1/2 teaspoon salt
  7. 1/2 cup organic pumpkin puree
  8. 6 eggs beaten
  9. 4 tablespoons coconut
  10. 1/3 cup + 1 tablespoon of pure maple syrup (+ extra for drizzling)
  11. 1 teaspoon vanilla
  12. 1/4 cup coarsely chopped pecans
What you do
  1. Preheat oven to 350 degrees.
  2. Grease muffin pans very well.
  3. Sift coconut flour, baking soda, salt and spices into small bowl.
  4. Stir to blend well and set aside.
  5. Place pumpkin puree in a medium mixing bowl.
  6. One by one, crack the eggs into the bowl, mixing well with the pumpkin puree after each egg is added.
  7. Add melted coconut oil, maple syrup and vanilla extract and mix throughly.
  8. Add flour mixture to egg mixture and blend well with a whisk until most of floury lumps have disappeared, but don’t stir more than necessary to blend.
  9. Gently fold in the pecans.
  10. Using a cookie or ice cream scoop, fill the greased muffin tin to two-thirds full.
  11. Bake for 18- 20 mins, until lightly golden brown on top and toothpick inserted into center of muffin is clean when removed.
  12. Turn out and cool on wire rack.
  13. Drizzle with maple syrup.
  14. Serve warm or room temperature.
