What you need
- 1/2 cup coconut flour, sifted
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup organic pumpkin puree
- 6 eggs beaten
- 4 tablespoons coconut
- 1/3 cup + 1 tablespoon of pure maple syrup (+ extra for drizzling)
- 1 teaspoon vanilla
- 1/4 cup coarsely chopped pecans
What you do
- Preheat oven to 350 degrees.
- Grease muffin pans very well.
- Sift coconut flour, baking soda, salt and spices into small bowl.
- Stir to blend well and set aside.
- Place pumpkin puree in a medium mixing bowl.
- One by one, crack the eggs into the bowl, mixing well with the pumpkin puree after each egg is added.
- Add melted coconut oil, maple syrup and vanilla extract and mix throughly.
- Add flour mixture to egg mixture and blend well with a whisk until most of floury lumps have disappeared, but donβt stir more than necessary to blend.
- Gently fold in the pecans.
- Using a cookie or ice cream scoop, fill the greased muffin tin to two-thirds full.
- Bake for 18- 20 mins, until lightly golden brown on top and toothpick inserted into center of muffin is clean when removed.
- Turn out and cool on wire rack.
- Drizzle with maple syrup.
- Serve warm or room temperature.
