What you need
  1. 1 1/2 lb Organic Beef Chuck Roast
  2. 3 Parsnips cut into 3/4 inch pieces
  3. 5 carrots cut into 3/4 inch pieces
  4. 4 ribs of celery cut into 3/4 inch pieces
  5. 12 small baby potatoes
  6. 10 pearl onions (ends cut off and remove the paper membrane)
  7. 5 cloves of garlic roughly chopped
  8. 1 1/2 cups of organic beef broth
  9. 1/4 cup of red wine vinegar
  10. 1/4 cup of coconut aminos
  11. 1/4 cup of red wine
  12. 1 teaspoon of kosher salt
  13. 1 teaspoon of thyme
  14. 1 teaspoon of sage
  15. 1 teaspoon of oregano
What you do
  1. Preheat the oven at 225
  2. Place the meat into a dutch oven
  3. Place the veggies around the meat
  4. In bowl, mix the broth, vinegar, coconut aminos, red wine, garlic, salt, thyme, sage and .
  5. Pour the mixture over the beef and vegetables
  6. Cook for 6 hours
  7. Break up the beef (it should be easy to break apart with a spoon) and ladle veggies and sauce over it all. (be careful, it will be HOT!)
