These are the closest thing I have ever come to pancakes and they are delicious. They are easy to flip as long as you keep them reasonable size, around 3 inches, like sliver dollars.

What you need
  1. 3 bananas
  2. 3 eggs
  3. 1/2 cup almond butter butter
  4. 2 teaspoons cinnamon
  5. 1 teaspoon baking soda *See note
  6. coconut oil
What you do
  1. Preheat a no-stick skillet on medium heat
  2. Combine all of your ingredients in your vitamix, blendtec, blender, or food processor and mix well until you have a batter
  3. Grease your skillet with coconut oil
  4. Make 3-4 inch pancakes ( I use a medium cookies scoop)
  5. Cook 2-3 minutes per side and then flip for 2-3 minutes
  6. Serve with topping of your choice (We like warmed up berries)
Tips & tricks
  1. There is some debate around if baking soda is Paleo. If you're not comfortable you can totally make these pancakes without the baking soda
