These are the closest thing I have ever come to pancakes and they are delicious. They are easy to flip as long as you keep them reasonable size, around 3 inches, like sliver dollars.

What you need
- 3 bananas
- 3 eggs
- 1/2 cup almond butter butter
- 2 teaspoons cinnamon
- 1 teaspoon baking soda *See note
- coconut oil
What you do
- Preheat a no-stick skillet on medium heat
- Combine all of your ingredients in your vitamix, blendtec, blender, or food processor and mix well until you have a batter
- Grease your skillet with coconut oil
- Make 3-4 inch pancakes ( I use a medium cookies scoop)
- Cook 2-3 minutes per side and then flip for 2-3 minutes
- Serve with topping of your choice (We like warmed up berries)
Tips & tricks
- There is some debate around if baking soda is Paleo. If you're not comfortable you can totally make these pancakes without the baking soda
