What you need
- 2 chicken breasts, bone in/skin on (breasts can be used)
- 1/4 cup red onion sliced thin
- 1/2 bunch of asparagus spears trimmed and cut into 1 inch pieces
For the Marinade
- 1/4 cup extra-virgin olive oil
- 1/4 cup balsamic vinegar
- 5 garlic cloves minced
- 2 tablespoons dried rosemary
- 1 teaspoons sea salt
What you do
- Preheat the oven to 400
- In a small mixing bowl add olive oil, balsamic, garlic and rosemary (not the salt).
- Reserve half the marinate for the vegetables
- Rinse chicken and pat it dry
- Take the chicken half of the marinated and add the salt
- Marinate chicken in the balsamic mixture for 5-30 mins.
- Discard marinade
- Set the chicken in as shallow dish
- Roast the chicken skin side up for 30mins
- Meanwhile toss the vegetables with the remaining balsamic marinade
- Add vegetables and remaining sauce to the chicken dish and back for another 10 minutes.
