What you need
  1. 1 lb salmon
  2. 1/2 lb baby broccoli
  3. 3 cloves garlic, smashed with skin on
  4. 1 lemon, cut into wedges
  5. 1 pinch parsley
  6. Olive oil
  7. Salt & pepper
What you do
  1. Preheat oven to 425ΒΊF.
  2. Season salmon fillet with salt and pepper, and place it skin-side down in a large oven-safe pan (cast iron, or a lined sheet pan will also work).
  3. Add baby broccoli to the same pan with a bit of olive oil, and tuck the garlic cloves and lemon around the fish and veggies.
  4. Place pan in hot oven and bake for 10-12 minutes, or until the salmon is just cooked through and flaky.
  5. Serve hot with parsley and any extra lemon wedges.
