What you need
- 2 tablespoons of butter [1 stick total ]
- 1 lb of twisted elbow macaroni [ 1 box ]
- 4 1/2 cups grated "good" sharp white cheddar [ 18 oz , 1 1/2 typical bricks ]
- 2 cups grated "good" Gruyere cheese [ 8 oz ]
- 5 1/2 cups of milk
- 6 tablespoons of butter
- 1/2 of cup all purpose flour
- 1/4 teaspoon of nutmeg
- 1/4 teaspoon of cayenne pepper
- 1/4 teaspoon of black pepper
- 1 tablespoon of Worcestershire
- 1 "sleeve" of low sodium Ritz crackers
What you do
- Pre-heat the oven to 375 degrees
- Put a pot of water on to boil for the pasta
- Butter a 3 quart casserole dish and set aside
- Cook the pasta 2 to 3 fewer mins. less than directed
- While pasta cooks, grate the cheese and set aside
- Drain the past and rinse in cold water, set aside
- In a medium sauce pan heat the milk on medium heat
- In a pot big enough to eventually hold all the pasta & the sauce, melt 6 tablespoons of butter on medium heat
- When the butter bubbles, whisk in the flour into the melted butter for one min.
- While whisking, slowly add the hot milk to the flour butter mixture
- Whisk constantly until the mixture thickens, approx. 15 mins of whisking
- Off heat and stir in nutmeg, cayenne, pepper & Worcestershire
- Add all but 1 cup of the cheese, and stir until melted into the mixture
- Add pasta and coat with the cheese
- Put the Ritz crackers into a baggie and pound until they are just crumbs
- Add the pasta to buttered casserole dish
- Top with remaining grated cheese
- Sprinkle with Ritz crumbs
- Bake for 30 min. until golden brown
