What you need
  1. 2 tablespoons of butter [1 stick total ]
  2. 1 lb of twisted elbow macaroni [ 1 box ]
  3. 4 1/2 cups grated "good" sharp white cheddar [ 18 oz , 1 1/2 typical bricks ]
  4. 2 cups grated "good" Gruyere cheese [ 8 oz ]
  5. 5 1/2 cups of milk
  6. 6 tablespoons of butter
  7. 1/2 of cup all purpose flour
  8. 1/4 teaspoon of nutmeg
  9. 1/4 teaspoon of cayenne pepper
  10. 1/4 teaspoon of black pepper
  11. 1 tablespoon of Worcestershire
  12. 1 "sleeve" of low sodium Ritz crackers
What you do
  1. Pre-heat the oven to 375 degrees
  2. Put a pot of water on to boil for the pasta
  3. Butter a 3 quart casserole dish and set aside
  4. Cook the pasta 2 to 3 fewer mins. less than directed
  5. While pasta cooks, grate the cheese and set aside
  6. Drain the past and rinse in cold water, set aside
  7. In a medium sauce pan heat the milk on medium heat
  8. In a pot big enough to eventually hold all the pasta & the sauce, melt 6 tablespoons of butter on medium heat
  9. When the butter bubbles, whisk in the flour into the melted butter for one min.
  10. While whisking, slowly add the hot milk to the flour butter mixture
  11. Whisk constantly until the mixture thickens, approx. 15 mins of whisking
  12. Off heat and stir in nutmeg, cayenne, pepper & Worcestershire
  13. Add all but 1 cup of the cheese, and stir until melted into the mixture
  14. Add pasta and coat with the cheese
  15. Put the Ritz crackers into a baggie and pound until they are just crumbs
  16. Add the pasta to buttered casserole dish
  17. Top with remaining grated cheese
  18. Sprinkle with Ritz crumbs
  19. Bake for 30 min. until golden brown
