Melissa was looking for a treat to take on hikes with Zoe and something easy to eat for breakfast. These easily portable snacks are as good as they sound.

- 1 cup rolled oats
- 1/2 cup mini semi-sweet chocolate chips
- 1/2 cup ground flax seed
- 1/2 cup organic crunchy peanut butter
- 1/3 cup raw organic honey
- 1 teaspoon vanilla extract
Instructions
- Put the honey into a small bowl and microwave it for 15 seconds.
- Combine oats, chocolate chips, flax seed, peanut butter, honey, and vanilla extract together in a bowl.
- Using a cookie scoop, form into balls.
- Arrange energy bites on a baking sheet and freeze until set, about 1 hour.
