Melissa was looking for a treat to take on hikes with Zoe and something easy to eat for breakfast.  These easily portable snacks are as good as they sound.

Instructions

  • Put the honey into a small bowl and microwave it for 15 seconds.
  • Combine oats, chocolate chips, flax seed, peanut butter, honey, and vanilla extract together in a bowl.
  • Using a cookie scoop, form into balls.
  • Arrange energy bites on a baking sheet and freeze until set, about 1 hour.
