For the French Toast Cupcakes
  1. 1 box of vanilla mix – I prefer super most Pillsbury white
  2. 1 cup of butter milk
  3. 1/3 cup of vegetable oil (if the cake mix box calls for more or less oil – use the amount on the box)
  4. 4 eggs
  5. 1 teaspoon fresh grated nutmeg
  6. 1 teaspoon cinnamon
For the maple cream cheese frosting
  1. 1 8-ounce package cream cheese, at room temperature
  2. 2 tablespoons unsalted butter, at room temperature
  3. 2 cups sifted confectioners’ sugar
  4. 1/4 cup maple syrup
  5. 2 teaspoons ground cinnamon
  6. 5 strips of cooked bacon
Make The French Toast cupcakes
  1. Preheat the oven to 350
  2. Line the muffin cups with paper liners
  3. Put the cake mix in your mixing bowl
  4. Add in the buttermilk, vegetable, oil, eggs, nutmeg, and cinnamon
  5. Beat until moistened – about 30 seconds
  6. Increase the speed to high and beat until thick – about another 2 mins
  7. Spoon the mix into the liners filling the cups about 2/3 of the way to the top.
  8. Bake for 15-20 mins – until a toothpick poked into the cupcake centers comes out clean.
  9. Remove the cupcakes from the baking plans and allow to cool completely before frosting.
Make The the maple cream cheese frosting
  1. Beat the cream cheese and butter with a mixer on medium speed until creamy.
  2. Add the confectioners’ sugar, maple syrup and cinnamon; beat until combined.
  3. Spread on the cooled cupcakes.
  4. Top with chopped bacon.
