What you need
- 2 3/4 cup flaked coconut
- 2/3 cup granulated sugar
- 1/4 cup salted macadamia nuts – ground
- 2 tablespoons coconut flour (or all purpose flour)
- 4 egg whites – lightly beaten
- 1 teaspoon vanilla
For the Filling
- 3/4 cup semisweet chocolate pieces
- 2 teaspoons shortening
- 26 macadamia nut pieces – 1/2 or 1/4
Baking Supplies
What you do
- Pre-heat the oven to 325°
- Line 2 cookie sheets with parchment paper.
- In a large bowl, combine coconut, sugar, ground macadamia nuts, flour and salt.
- Stir in egg whites and vanilla.
- Using a cookie scoop or spoon, drop rounded teaspoons of dough onto parchment about 2 in. apart.
- Using a teaspoon or the back of rounded measuring spoon, create an indentation in the dough mound to make a “nest”.
- Bake cookies for 20 mins. – until just browned.
- Transfer to wire wrack and cool for 20 mins.
Fill the cookies
- In a small saucepan, melt chocolate pieces and shortening until smooth.
- Spoon melted chocolate into the indentation and place a nut piece in the chocolate center.
- Let stand 30 mins. or until chocolate sets.
