What you need
- 1 1/4 cups unsalted butter – softened
- 2/3 cup sugar
- 2 cups all-purpose flour
- 13/4 cups finely ground almonds
- 1/4 teaspoon cinnamon
- jar of raspberry jam – the good stuff!
- powdered sugar
What you do
- Cream butter and sugar.
- Beat in flour (half cup at a time), almonds, cinnamon and continue beating until mixture becomes a slightly stiff dough
- Shape dough into a ball, wrap in plastic and refrigerate for about 1 hour.
- Preheat the oven to 325°.
- Roll dough 3/4 inch balls and place on parchment lined cookie sheets.
- Using a glass that was rubbed with four flatten the balls into 11/2 inch rounds. Try to make balls even.
- Bake for 10 mins. until edges are just browning. Don’t over cook.
- Cool on wire wrack for 15 mins. Then “pair” cookies with aprox. same size partners.
- Spread the flat side of one of the pairs with jam (Don’t be skimpy!) and place its pair on top. If you’re not freezing them, sprinkle with powdered sugar.
Tips & tricks
- What no holes? This dough is the most difficult I have ever worked with. Try as I might, I've never been able to successfully been able to roll and cute these cookies. And so, no holes... just sandwiches. I'm sure it's possible to roll and cut these out. If you can do it, hats of to you. Please tell me your secret.
