I love lemon cookies, and, as you’ve probably noticed, I’m a big fan of thumbprint cookies.  They are easy but have that little something extra.  This recipe blends both of my loves.

What you need
  1. 1 cup butter – softened
  2. 2/3 cup sugar
  3. 1/4 teaspoon salt
  4. 1 egg
  5. 1/2 teaspoon vanilla extract
  6. 1/2 teaspoon lemon extract
  7. 2 1/2 cups all purpose flour
  8. 1 tablespoon poppy seeds
  9. lemon curd
What you do
  1. Preheat the oven to 350°.
  2. Line two cookie sheets with parchment paper.
  3. Cream butter for 30 seconds.
  4. Add in sugar and salt until combined.
  5. Beat in egg and extracts.
  6. Beat in flour.
  7. Stir in poppy seeds.
  8. Using a cookie scoop or spoon, drop rounded teaspoons of dough onto parchment about 2 in. apart.
  9. Using a teaspoon or the back of rounded measuring spoon, create an indentation in the dough mound to make a “nest”.
  10. Bake cookies for 9 mins. – until just browned.
  11. Allow to cool completely.
  12. Fill each thumbprint depression with lemon curd.
