For the Chicken
- 3 organic chicken cutlets
- 1 tablespoon of olive oil
- 3 garlic cloves
- Sea salt and pepper to taste
For the Lemon Artichoke Sauce
- 1/4 cup olive oil
- 1/4 lemon juice plus another 2 tablespoons
- 1/2 cup of Trader Joe's Artichoke Antipasto (don't worry it's organic and clean eating)
- 1 teaspoon of thyme
- 1 teaspoon of basil
- 1/4 cup finely chopped yellow onion
- 1/2 cup sliced mushrooms
What you do
- Pound the chicken flat
- Salt and Pepper to taste
- In a sauté pan, warm the oil
- Add the garlic and sauté for a 2 mins
- Brown the chicken in the garlic oil for 6 mins on each side
- Remove the chicken from the pan and set it aside
- Put the onions and mushrooms into the pan
- Add 1 tablespoon of lemon juice
- Cook the mushrooms and onions until they are cooked through
- Meanwhile wish together the olive oil, lemon juice, artichoke antipasto, thyme and basil
- Put the chicken back into the pan
- Add the sauce to the pan and simmer for 8 mins
