For the Chicken
  1. 3 organic chicken cutlets
  2. 1 tablespoon of olive oil
  3. 3 garlic cloves
  4. Sea salt and pepper to taste
For the Lemon Artichoke Sauce
  1. 1/4 cup olive oil
  2. 1/4 lemon juice plus another 2 tablespoons
  3. 1/2 cup of Trader Joe's Artichoke Antipasto (don't worry it's organic and clean eating)
  4. 1 teaspoon of thyme
  5. 1 teaspoon of basil
  6. 1/4 cup finely chopped yellow onion
  7. 1/2 cup sliced mushrooms
What you do
  1. Pound the chicken flat
  2. Salt and Pepper to taste
  3. In a sauté pan, warm the oil
  4. Add the garlic and sauté for a 2 mins
  5. Brown the chicken in the garlic oil for 6 mins on each side
  6. Remove the chicken from the pan and set it aside
  7. Put the onions and mushrooms into the pan
  8. Add 1 tablespoon of lemon juice
  9. Cook the mushrooms and onions until they are cooked through
  10. Meanwhile wish together the olive oil, lemon juice, artichoke antipasto, thyme and basil
  11. Put the chicken back into the pan
  12. Add the sauce to the pan and simmer for 8 mins
