What you need
- juice of 2 lemons
- 1/4 cup extra virgin olive oil
- 1 teaspoon of garlic powder
- 2 lbs skin-on chicken thighs
- pinch of sea salt & fresh ground black pepper
- 1 clove of garlic minced
- 1 teaspoon fresh thyme leaves, minced
- 1 teaspoon of organic dijon mustard
- 2 tablespoons of raw organic honey
What you do
- Preheat the oven at 400
- Combine the lemon, oil, and garlic powder in a mixing bowl.
- Add the chicken thighs and stir to coat the chicken in the mixture.
- Place the thighs on an elevated rack on a rimed backing sheet
- Season each chicken thigh with a pinch of salt and pepper
- Place in in the oven and roast for 30 minuets
- While the chicken is roasting, combine the garlic, thyme, mustard and honey in a small bowl and stir well
- At the 30 min mark, brush the thighs with the mixture
- Bake for an additional 5 minutes
- Remove from the oven and serve
- Garnish with the extra honey mustard
