What you need
  1. juice of 2 lemons
  2. 1/4 cup extra virgin olive oil
  3. 1 teaspoon of garlic powder
  4. 2 lbs skin-on chicken thighs
  5. pinch of sea salt & fresh ground black pepper
  6. 1 clove of garlic minced
  7. 1 teaspoon fresh thyme leaves, minced
  8. 1 teaspoon of organic dijon mustard
  9. 2 tablespoons of raw organic honey
What you do
  1. Preheat the oven at 400
  2. Combine the lemon, oil, and garlic powder in a mixing bowl.
  3. Add the chicken thighs and stir to coat the chicken in the mixture.
  4. Place the thighs on an elevated rack on a rimed backing sheet
  5. Season each chicken thigh with a pinch of salt and pepper
  6. Place in in the oven and roast for 30 minuets
  7. While the chicken is roasting, combine the garlic, thyme, mustard and honey in a small bowl and stir well
  8. At the 30 min mark, brush the thighs with the mixture
  9. Bake for an additional 5 minutes
  10. Remove from the oven and serve
  11. Garnish with the extra honey mustard
