What you need
  1. 1 tablespoon finely chopped fresh rosemary, plus three rosemary sprigs
  2. 1/4 cup of Organic Gluten Free Mustard-Dijon
  3. 1/3 cup of organic honey
  4. 1 tablespoon of olive oil
  5. 2 teaspoons of course sea salt
  6. 2 teaspoons of freshly ground black pepper
  7. 2 medium sweet potatoes or yams, thinly sliced, skin on
What you do
  1. Preheat the grill to medium (indirect heat).
  2. In a large bowl whisk together the rosemary, mustard, honey, olive oil, salt, and pepper.
  3. Add the sweet potatoes and coat with the mixture (hands are best).
  4. Place 2 18 inches pieces of foil on top of each other.
  5. Dump the potatoes onto one piece of foil and spread them out, leaving an inch around the edge.
  6. Fold the bottom piece of foil over the top and seal closed around the edges making a packet.
  7. Place the packet on the grill over indirect heat
  8. Grill for 40-45 minuets with the lid closed, until you can easily pierce a sweet potato with a fork.
