What you need
- 1 box of white (or tie-die cake mix) -- I recommend Duff Goldman Tie-Dye Cake Mix
- 1 cup of butter milk
- 1/3 cup of vegetable oil (if the cake mix box calls for more or less oil - use the amount on the box)
- 4 eggs
- 1 box of red, yellow, green and blue food coloring
For the "decorators" frosting
- 4 cups of confectioner's sugar
- 1 cup vegetable shortening
- 2 tablespoons of water
- 1 teaspoon Vanilla extract
- 3 tablespoons of corn syrup
To make the cupcakes
- Preheat the oven to 350
- Line the muffin cups with paper liners
- Put the cake mix in your mixing bowl
- Add in the buttermilk, vegetable oil and eggs
- Beat until moistened – about 30 seconds
- Increase the speed to high and beat until thick – about another 2 mins
- Separate the cake mix equally into 6 bowls. (see photo)
- Make Red: Add 150 of drops of red food color
- Make Orange: Add 50 of drops of red food color and add 45 drops of yellow food color
- Make Yellow: Add 22 of drops of yellow food color
- Make Green: Add 76 of drops of green food color
- Make Blue: Add 61 of drops of blue food color
- Make Purple: Add 22 of drops of blue food color and add 35 of drops of red food color
- Using a spoon layer each of the colors into the liners filling the cups about 2/3 of the way to the top. (see photo below)
- Bake for 15-20 mins – until a toothpick poked into the cupcake centers comes out clean.
- Remove the cupcakes from the baking plans and allow to cool completely before frosting.
To make the decorator's Frosting
- Combine confectioner's sugar, vegetable shortening, water and vanilla extract in a medium-size mixing bowl.
- Beat the mixture with an electric mixer on low speed, just until combined.
- At this point, the frosting will be very thin.
- Turn the speed to medium and beat for an additional five minutes.
- The frosting should be light and fluffy after beating.
- Add 3 tablespoons of corn syrup .
- Turn the electric mixer on medium and beat for 1 to 2 minutes, or until the desired consistency (pretty thick) is achieved.
- Put the frosting into a piping bag to use for decorating.
Tips & tricks
