What you need
  1. 4 pounds assorted heirloom tomatoes (preferably a mix of colors)
  2. 2/3 cup best-quality extra-virgin olive oil
  3. Freshly ground pepper
  4. Garlic salt to taste
  5. 4 tablespoons of high quality balsamic vinegar
  6. 1/2 teaspoon of sugar
  7. 1 large red onion, quartered and thinly sliced
  8. 1 cup fresh basil leaves
  9. 1/4 cup of fresh oregano
  10. 2 baguettes, cut in half horizontally
  11. 2 garlic cloves, peeled
What you do
  1. Preheat grill or broiler to high.
  2. Slice the tops of of the tomatoes and remove most of the seeds with a spoon (this will keep it from being soupy)
  3. Cut the tomatoes into 1/2 inch pieces and add to a large bowl.
  4. Combine tomatoes, oil, vinegar, sugar, 1 tablespoon salt, and pepper to taste in a large bowl.
  5. Add the herbs and onions -- reserving some basil for garnish (see note)
  6. Toast cut side of baguette halves on grill or under broiler 1 to 2 minutes.
  7. While still hot, lightly rub cut surface with garlic.
  8. Spoon tomato mixture over bread with a slotted spoon.
  9. Slice each baguette half into 3- or 4-inch-long pieces (about 12 slices per baguette).
Tips & tricks
  1. Make sure to bring the tomato mixture to room temperature before you add it to the toast.
