What you need
- 3 cloves of crushed garlic
- 1 tablespoon of grated lemon zest (1 lemon)
- 1 tablespoon minced fresh oregano
- 1/2 teaspoon of salt
- 2 pounds of lamb chops
What you do
- Position oven rack so that your lamb chops will be about 6 inches from the top of your oven
- Preheat the broiler on high for 10 mins
- Combine the garlic, lemon zest, oregano and salt
- Pat the lamb chops dry with paper towels and place on roasting pan
- Rub the seasoning mix all of the top of the chops
- Broil for 4-8 minuets per side, until the internal temp reaches 145 (medium-rare) or 160 (medium)
- Let the chops rest for 5 mins, enjoy.
