For the Greek Dressing
  1. 1/2 cup extra virgin olive oil
  2. 2 tablespoons of fresh lemon juice
  3. 1/3 cup apple cider vinegar
  4. 1 teaspoon of dried oregano leaves
  5. 2 gloves of crushed garlic
  6. 1 tablespoon lemon zest
  7. 1/8 teaspoon of salt
For the Salad
  1. 1 cucumber sliced thin
  2. 1 red pepper chopped
  3. 1 green pepper chopped
  4. 1/2 a red onion chopped
  5. 1 cup of cherry tomatoes sliced
  6. 1/2 cup black olives
What you do
  1. Place all dressing ingredients in a container and shake well
  2. Place all the salad ingredients into a bowl and toss with dressing
