For the Greek Dressing
- 1/2 cup extra virgin olive oil
- 2 tablespoons of fresh lemon juice
- 1/3 cup apple cider vinegar
- 1 teaspoon of dried oregano leaves
- 2 gloves of crushed garlic
- 1 tablespoon lemon zest
- 1/8 teaspoon of salt
For the Salad
- 1 cucumber sliced thin
- 1 red pepper chopped
- 1 green pepper chopped
- 1/2 a red onion chopped
- 1 cup of cherry tomatoes sliced
- 1/2 cup black olives
What you do
- Place all dressing ingredients in a container and shake well
- Place all the salad ingredients into a bowl and toss with dressing
