Greek Marinated Lamb Chops – Paleo

Description

I love lamb chops and nothing beats greek marinade. The lemon and oregano is a fantastic combination.


Ingredients

Scale
  • 1/3 cup olive oil
  • 6 garlic cloves, chopped
  • 1/2 cup chopped fresh oregano
  • juice of 2 lemons
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 3-4 oz lamb chops

Instructions

  1. In a small bowl, mix all the ingredients together into a paste.
  2. Rub the paste all over the lamb.
  3. Place the lamb in a shallow bowl and cover with any remaining marinade.
  4. Marinate for about 2 hours at room temperature, or, preferably, cover the lamb and marinate overnight in the refrigerator. Turn the meat from time to time to make sure that it’s well marinated.

Grilling Directions

  1. Depending on their thickness, grill the chops over medium-hot coals for 3 to 5 minutes per side, turning once or twice.

Broiling Directions

  1. Broil the chops 3 inches from the flame for 3 to 5 minutes per side.

Notes

  • The chops should be 120Β° to 135Β°F at the thickest part for rare to medium rare.
