What you need
- 1 lb. boneless skinless chicken breast
- 1/2 cup extra virgin olive oil (or coconut oil if desired)
- Juice 1 lemon
- 2 tbsp red wine vinegar
- 2 cloves garlic, grated
- 1/2 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- Kalamata olives
- Sliced grape tomatoes
- 1/3 cup fresh mint and basil leaves
What you do
- Add the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper to a pint sized mason jar.
- Screw the lid onto the mason jar and shake for 1-2 minutes or until combined.
- Pour the dressing over the chicken in a baking dish or plastic storage bag and marinate for 30 minutes - 1 hour.
- Grill chicken until cooked through and optionally, serve topped with kalamata olives, grape tomatoes and the fresh mint and basil leaves
Tips & tricks
- Add feta (like the photo) if you're not going doing Paleo!
