For the Hens
- 2 Cornish Hens
- 2 tablespoons of butter, melted
- 1 fresh peach
- 1/4 teaspoon of cinnamon
- Sprinkle of dried thyme
- Sprinkle of paprika
- Salt & Pepper
For the Glaze
- 1 small jar of peach preserves - American Spoon Fruits gingered peach is best
- 1 12oz container of orange juice
- 1/4 teaspoon of cinnamon
- 1/4 teaspoon of ginger
- 1/4 teaspoon of dried thyme
- 3 shakes of paprika
What you do
- Preheat the oven to 400 degrees
- Cut the peach up into 1/2 inch pieces
- Clean the hens and put them in a roasting pan
- Place the peach pieces in the hen cavity until they are full
- Melt the butter and brush the hens
- Sprinkle both hens with the cinnamon, thyme, paprika, salt & pepper
- Put the hens in the oven and for 15 minuets
- In a sauce pan on medium heat bring the jam, orange juice, cinnamon, ginger, thyme and paprika to a gentle boil
- Take the hens out of the oven and baste with the mixture, making sure to leave about 1/2 still in the pan
- Baste the hens every 15 minuets until they 165 degrees at the thickest area (about 35 more minuets)
- When the hens are done let them sit for 10 minuets and spoon the remaining sauce over the top of the hens before serving.
