For the Hens
  1. 2 Cornish Hens
  2. 2 tablespoons of butter, melted
  3. 1 fresh peach
  4. 1/4 teaspoon of cinnamon
  5. Sprinkle of dried thyme
  6. Sprinkle of paprika
  7. Salt & Pepper
For the Glaze
  1. 1 small jar of peach preserves - American Spoon Fruits gingered peach is best
  2. 1 12oz container of orange juice
  3. 1/4 teaspoon of cinnamon
  4. 1/4 teaspoon of ginger
  5. 1/4 teaspoon of dried thyme
  6. 3 shakes of paprika
What you do
  1. Preheat the oven to 400 degrees
  2. Cut the peach up into 1/2 inch pieces
  3. Clean the hens and put them in a roasting pan
  4. Place the peach pieces in the hen cavity until they are full
  5. Melt the butter and brush the hens
  6. Sprinkle both hens with the cinnamon, thyme, paprika, salt & pepper
  7. Put the hens in the oven and for 15 minuets
  8. In a sauce pan on medium heat bring the jam, orange juice, cinnamon, ginger, thyme and paprika to a gentle boil
  9. Take the hens out of the oven and baste with the mixture, making sure to leave about 1/2 still in the pan
  10. Baste the hens every 15 minuets until they 165 degrees at the thickest area (about 35 more minuets)
  11. When the hens are done let them sit for 10 minuets and spoon the remaining sauce over the top of the hens before serving.
