What you need
  1. 3 large eggs
  2. 1/2 cup + 3 tablespoons almond milk
  3. 1 tablespoon organic honey
  4. 1/2 tablespoon freshly squeezed lemon juice
  5. 1 teaspoon vanilla extract
  6. 1/2 cup coconut flour
  7. 1/2 cup tapioca flour
  8. 1.2 teaspoon baking powder
  9. 1/2 teaspoon baking oda
  10. pinch of fine grain sea salt
  11. Coconut Oil (for greasing the skillet
  12. 1/2 cup fresh blueberries
For Syrup
  1. 2 teaspoons coconut butter
  2. 1/4 cup of blueberries
  3. 1/2 cup maple syrup
  4. 1/4 teaspoon cinnamon
What you do
  1. In a large bowl whisk the eggs
  2. Add the almond milk, honey, lemon juice, vanilla and whisk until well blended.
  3. In a separate bowl, mix together the coconut flour and tapioca flour, then add to the wet ingredients 1/4 cup at a time, while continuously whisking.
  4. Then mix in the baking powder, balking soda and salt.
  5. Grease a large skillet and place over medium heat
  6. Once the skillet is hot, use a ladle to pour 3 inch pancakes
  7. Once holes begin to appear in the surface of a pancake, drop a small handful of blueberries into it and flip it.
  8. Cool on each side for 3 to 4 mins.
  9. Repeat with the rest of the batter.
For the Syrup
  1. Warm coconut butter, blueberries, maple syrup and cinnamon in a small sauce pan and pour over pancakes while still warm.
