What you need
  1. 3 teaspoons extra-virgin olive oil
  2. Kosher salt
  3. 1 cup fresh corn kernels (from 2 ears)
  4. 2 tablespoons of milk
  5. 1/2 small jalapeno pepper, seeded and chopped
  6. 2 shakes of chula hot sauce
  7. 1 small red pepper, chopped
  8. 2 tablespoons chopped fresh cilantro
  9. 2 tablespoons chopped red onion
  10. 2 tablespoons fresh lime juice
  11. 1/2 teaspoon sugar
What you do
  1. Bring a small pot of water & milk to a boil.
  2. Add the corn and cook until tender, 2 to 3 minutes; drain.
  3. Cut the corn off the cob
  4. Mix the corn jalapeno, hot sauce, cilantro and red onion in a bowl.
  5. Stir in the olive oil, the lime juice, sugar and 1/2 teaspoon salt.
