What you need
- 2 sticks butter – softened
- 1 cup of granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon of vanilla
- 1 egg
- pinch of salt
- 2 1/4 cups all-purpose flour
Optional Royal Icing
- 2 cups powdered sugar
- 4 teaspoons meringue powder
- 3 tablespoons of cold water
- assorted food coloring
- sprinkles, sanding sugar & cookie decorations
What you do
- Cream butter on med. high speed for 30 seconds.
- Beat in sugar, baking powder and salt until well combined, scraping sides of bowl occasionally.
- Beat in egg and vanilla until combined.
- Add in flour until just incorporated.
- Separate dough into 2 disks and wrap in plastic wrap. Refrigerate for 1-3 hours.
- Preheat the oven to 350°.
- Roll out 1 disk of dough at a time to 1/4 in. thickness and cut out dough with cookie cutters (see tip)
- Bake cookies for 6-8 mins. – until edges are just set.
- Transfer to wire wrack and cool for 15 mins.
- If desired, mix ingredients for the royal icing. Divide and tint portions with food coloring.
- Pipe (with pastry bag) or paint (with paint brushes) and decorate as desired.
- Allow icing to set for 2 hours before stacking.
Tips & tricks
- Perfect Shapes: Roll dough out between 2 pieces of lightly floured parchment paper. Freeze for 15 mins. and then cut out. Poof, no more floppy , unrecognizable shapes!
- Pretty Colors: Food color is powerful stuff, use a toothpick and add tiny bits of color at a time. You can always make it darker, making it lighter… not so easy,
