What you need
- 2/3 cup white sugar
- 4 tablespoons cinnamon
- 1 piece store bought puff pastry, defrosted but still cold
What you do
- Preheat oven to 450
- Line 2 cookie sheets with parchment paper.
- In a small bowl add sugar and cinnamon.
- Spread half the cinnamon sugar over a large cutting board and place the puff pastry on top of the cinnamon sugar.
- Add the rest of the cinnamon sugar over top the puff pastry.
- Spread the sugar mixture around until the whole puff pastry is covered.
- Using a rolling pin gently press the puff pastry to adhere the cinnamon sugar on both sides.
- Roll both of the long sides tightly up until they meet in the middle.
- Cut cookies in 1/2 inch slices and carefully keeping as much of the sugar mixture on the pastry as possible.
- Place onto the prepared baking sheet.
- Leave a little space between the cookies as they will puff up a bit while baking.
- Bake 6-8 minutes or until they are lightly browned and puffed.
- Remove from the oven and let cool.
