What you need
  1. 2/3 cup white sugar
  2. 4 tablespoons cinnamon
  3. 1 piece store bought puff pastry, defrosted but still cold
What you do
  1. Preheat oven to 450
  2. Line 2 cookie sheets with parchment paper.
  3. In a small bowl add sugar and cinnamon.
  4. Spread half the cinnamon sugar over a large cutting board and place the puff pastry on top of the cinnamon sugar.
  5. Add the rest of the cinnamon sugar over top the puff pastry.
  6. Spread the sugar mixture around until the whole puff pastry is covered.
  7. Using a rolling pin gently press the puff pastry to adhere the cinnamon sugar on both sides.
  8. Roll both of the long sides tightly up until they meet in the middle.
  9. Cut cookies in 1/2 inch slices and carefully keeping as much of the sugar mixture on the pastry as possible.
  10. Place onto the prepared baking sheet.
  11. Leave a little space between the cookies as they will puff up a bit while baking.
  12. Bake 6-8 minutes or until they are lightly browned and puffed.
  13. Remove from the oven and let cool.
