What you need
- 1 Package of Chicken
- 1 cup Almond Flour
- 1 Egg
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 teaspoon Italian Seasoning
- 1 tablespoon Ghee
- Juice of 2 lemons
- 1/2 cup of organic Chicken Broth
- 1/2 cup Sherry Wine
- 1/2 Large Shallot
- 1/4 cup Avocado Oil
What you do
- Mince Shallot.
- In a large skillet, on high heat, add Avocado Oil and shallot.
- In a large bowl, mix Almond Flour, Salt, Pepper and Italian seasoning.
- Dip chicken in wisked egg and then into flour mixture and lay in oiled skillet (repeat for all pieces of chicken).
- Let Chicken fry on both sides until cooked fully (about 2 min each side).
- Once cooked through, on medium heat, add Ghee to skillet.
- Once Ghee is melted, add juice of 1 lemon, chicken broth and sherry wine.
- The mixture should almost be boiling. Keep flipping chicken in sauce.
- Add the juice of other lemon on top of chicken right before you take the pan off the stove.
- Garnish with sliced lemon
