I’m obsessed with making a stir-fry during the week. The trick is to have all the ingredients prepped and ready to go before you start to cook so that every element can go in at exactly the right moment.
Lamb Stir-Fry with Pomegranate and Coconut Yogurt
Lamb is a great way to break out of the usual beef-chicken-pork rut, especially when used in a quick-cooking but complex-tasting dish like this.
Chili Beef, Basil and Asparagus Stir-Fry
This stir-fry uses the strong flavors of chilies and the refreshing flavor of basil to create a nice contrast of tastes. Beef is a good choice of meat for such a strong-flavored stir-fry.
Ahi Poke
This paleo adaption of Ahi Poke which is Hawaiian Tuna Tartar.
Kung Pao Chicken
Quick stir frys are great for a week night dinner. This paleo recipe sacrifices none of the delicious pow of Kung Pao.
Homemade Sriracha
I love Siracha sauce and needed a paleo version for many of my favorite recipes. This one is quick and easy!
Korean-Style Lettuce Wraps
This paleo take on the traditional Kalbi Korean-style grilled short rib dish is a great combo of meaty, salty, sweet and garlicky flavors.
Hanger Steak with Spicy Miso Glaze
Known for its intensely beefy flavor, hanger steak is also sometimes called “butcher’s steak” because butchers often keep it for themselves. If you can’t find it, you can use sirloin tip steak, but it will cook more quickly.
Korean BBQ Chicken
This sweet and tangy marinade makes the delicious bbq chicken. Try to marinade the chicken for at least four hours!
Kung Pao Shrimp Stir Fry – Weight Watchers
Try this dish for Chinese New Year. The shrimp symbolize happiness, and the scallions represent intelligence.
Spicy Chicken with Broccoli
This is one of Melissa and my favorite week night meals. It’s really yummy and very quick to make.
Lettuce Wraps
Delicious and bursting with flavor, Asian lettuce wraps are a great idea for entertaining or a family style meal. Each person can build their own fresh, delicious wrap. Just be sure to have plates or napkins available since the mixture can sometimes drip a little.
Coconut-Cashew Basmati Rice
A nice “dress” up for regular Basmati Rice and is delicious with seafood (especially seared scallops)
Coconut Shrimp
Let’s face it who doesn’t like coconut shrimp. This recipe is easy and tasty!
Vietnamese Spring Rolls
The classic Vietnamese summer roll is as lovely to look at as it is delicious to eat: plump shrimp, fragrant herbs, and rice noodles bundled in a soft rice paper wrapper. For a twist, try substituting Honey Ginger Chicken or Grilled Sesame Beef for the shrimp. Serve the summer rolls with one or more dipping sauces such as Nuoc Cham or Pineapple Lime Dipping Sauce.
Asian Glazed Braised Short Ribs
We loved the short ribs at Taka in Asbury Park. Melissa and I are on a mission to make some just as good at home!
