For the Shortbread Cookie
  1. 2 sticks unsalted butter ~ softened
  2. 2/3 cup packed brown sugar
  3. 1/2 teaspoon vanilla
  4. 2 3/4 cups all-purpose flour
  5. 1/4 cup whipping cream
  6. 1 egg
  7. 1/3 cup heath bar bits
For the Caramel Filling
  1. 22 3 tablespoons whipping cream
For the top decoration Cookie
  1. 1/3 cup heath bar bits
  2. 1/2 cup semisweet chocolate pieces
  3. 2 teaspoons shortening
Make the Cookies
  1. Preheat oven to 375.
  2. On med. high speed – beat butter for 1 minute.
  3. Beat in brown sugar and vanilla.
  4. Add in 1/2 the flour, 1/4 cup whipping cream and the egg.
  5. Beat in the remaining flour on low speed until just incorporated.
  6. Stir 1/3 of a cup heath bar crumbles into dough.
  7. Using a medium cookie scoop shape the dough into balls.
  8. Place balls 2 inches apart on parchment lined cookie sheets.
  9. Use your thumb to make a large indentation in the center of each ball.
  10. Bake in oven about 10 mins. or until edges are set.
Create the Caramel Filling
  1. While cookies are in the oven, heat and stir caramels and 3 tablespoons whipping cream in a small saucepan over low heat until melted and smooth.
  2. Take out of the oven and if necessary, re-press centers of cookies.
  3. Spoon about 1 teaspoon melted caramel into each cookie center & sprinkle with remaining heath bar.
Add the Chocolate Drizzle
  1. Once cookies are cool, heat chocolate and shorting in a saucepan.
  2. Drizzle chocolate mixture over tops of cookies.
