What you need
  1. 2 tablespoons unsalted butter
  2. 2 yellow onions, thinly sliced
  3. ¼ teaspoon salt
  4. 8 ounces of store bought puff pastry, rolled into a ¼-inch thick rectangle
  5. 3 tablespoons fig jam
  6. 4 tablespoons blue cheese crumbles
  7. 1 tablespoon parsley, thin sliced
What you do
  1. Melt the butter in small pot with a lid over low heat.
  2. Add the onions and salt and cook, covered, stirring occasionally.
  3. Keep cooking until the onions have released all of their moisture, about 1 hour.
  4. Remove the lid, and stir until the onions turn a golden brown, about another 20 minutes.
  5. Remove from heat and set aside.
  6. Heat oven to 425°.
  7. Line a baking sheet with parchment paper.
  8. Cut the puff pastry into 2-inch strips and transfer to the prepared sheet.
  9. Bake until golden brown and puffy, 10-12 minutes.
  10. Remove the pastry from oven and let cool.
  11. Cut about ¼ inch off the top to create a flat surface.
  12. Spread the middle of each puff strip with the caramelized onions, then top with fig spread and the crumbled blue cheese.
  13. Put back in the oven just until the cheese begins to brown, about 2 minutes.
  14. Cut the finished strips into 1½-inch pieces and garnish with parsley before serving.
