For the dressing
  1. 6 cloves of garlic, mashed and minced
  2. 1 tablespoon Dijon mustard
  3. 1 tablespoon of white wine vinegar
  4. 2 tablespoons mayonnaise
  5. 1/2 cup of olive oil
  6. salt
  7. pepper
  8. lemon juice from 1/2 a lemon
  9. minced anchovy fillets (optional)
For the croutons
  1. 1 baguette
  2. 3 tablespoons butter
  3. 1 teaspoon garlic powder
  4. 1 teaspoon paprika
  5. 1 teaspoon pepper
For the salad
  1. Romaine lettuce
  2. Fresh grated Parmesan
Make the dressing
  1. Combine garlic, mustard, vinegar and two pinches of salt in a blender and mix thoroughly.
  2. Add mayonnaise and blend together to form a thick base.
  3. In a slow stream add olive oil through hole in lid.
  4. Scrape dressing with spatula into a bowl and season to taste with salt, pepper and lemon juice.
  5. If desired, add anchovy to dressing to create a deeper, saltier taste.
Make the croutons
  1. Cut baguette into cubes.
  2. Melt butter in skillet and season with garlic powder, paprika and pepper.
  3. Add bread cubes and saute just until bread cubes begin to brown.
  4. Set aside to cool.
Make the salad
  1. Wash and dry lettuce.
  2. In a large salad bowl combine lettuce, dressing and croutons.
  3. Top with freshly grated Parmesan.
  4. Toss gently to combine well
