What you need
- 1 1/2 cups peanut butter
- 1 cup butter, softened
- 1/2 teaspoon vanilla extract
- 6 cups confectioners sugar
- Toothpicks
- 4 cups semisweet chocolate chips

What you do
- Line 2 cookie sheets with parchment paper.
- In a large bowl, cream the peanut butter, butter and vanilla.
- Add in the confectioners' sugar, a cup at a time on low speed. (The dough will look dry.)
- Using a cookie scoop, roll into balls and place on a parchment-lined cookie sheet.
- Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
Dip the buckeyes
- Melt chocolate chips in a double boiler, stirring frequently until smooth.
- Dip frozen peanut butter balls in chocolate holding onto the toothpick.
- Leave about 1/3 of peanut butter showing at the top to make them look like Buckeyes.
- Put them back on the cookie sheet and refrigerate until serving.
