What you need
  1. 1 1/2 cups peanut butter
  2. 1 cup butter, softened
  3. 1/2 teaspoon vanilla extract
  4. 6 cups confectioners sugar
  5. Toothpicks
  6. 4 cups semisweet chocolate chips
What you do
  1. Line 2 cookie sheets with parchment paper.
  2. In a large bowl, cream the peanut butter, butter and vanilla.
  3. Add in the confectioners' sugar, a cup at a time on low speed. (The dough will look dry.)
  4. Using a cookie scoop, roll into balls and place on a parchment-lined cookie sheet.
  5. Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
Dip the buckeyes
  1. Melt chocolate chips in a double boiler, stirring frequently until smooth.
  2. Dip frozen peanut butter balls in chocolate holding onto the toothpick.
  3. Leave about 1/3 of peanut butter showing at the top to make them look like Buckeyes.
  4. Put them back on the cookie sheet and refrigerate until serving.
