What you need
  1. 25 cupcake liners
  2. 1/4 lb brioche loaf or mixture of brioche and other white bread
  3. 1 1/2 cups of milk
  4. 1 teaspoon of vanilla extract
  5. 2 large eggs
  6. 1/2 cup of sugar
  7. 1 1/2 cups of blueberries
  8. 4 oz of white chocolate, chopped into small chunks (chip size)
  9. powered sugar for garish
What you do
  1. Preheat the oven at 375.
  2. Line the muffin tin with cupcake papers.
  3. Cut brioche into 1/2 inch slices and then into 1/2 inch cubes.
  4. place bread on sheet pan and toast in oven until dry (about 5 mins).
  5. In a large bowl whisk together milk, vanilla, eggs and sugar.
  6. Add the toasted bread, submerge in the milk and eggs mixture.
  7. Squeeze the bread pieces by hand in the wet mixture to fully incorporate.
  8. Let stand for 10 mins.
  9. Fold in the blueberries and white chocolate.
  10. Fill each muffin tin almost to the top, pressing the bread into the cups tightly.
  11. Bake for 20 mins or until the pudding is browned and crisp.
  12. Allow to sand 5 mins before serving.
  13. Sprinkle warm pudding with powdered sugar if desired and serve.
