What you need
  1. 1 spray(s) cooking spray
  2. 1 1/2 pound(s) uncooked farm raised tilapia
  3. 3 Tbsp blackening seasoning, or to taste
  4. 5 medium fresh radish(es), red
  5. 1 medium cucumber(s), chopped
  6. 1/2 medium sweet red pepper(s), chopped
  7. 3 medium uncooked scallion(s), sliced
  8. 1 Tbsp cilantro, fresh, chopped
  9. 2 Tbsp fresh lime juice
  10. 1 tsp olive oil
  11. 1/8 tsp table salt
  12. 1/8 tsp black pepper
What you do
  1. Coat a large nonstick sautΓ© pan with cooking spray.
  2. Coat tilapia with blackening spice and cook over medium-high heat until fish flakes with a fork, about 2 to 3 minutes per side. [ see note ]
  3. Slice each radish in half and then thinly slice each half into 1/2 moons.
  4. In a medium bowl, combine radishes, cucumber, red pepper, scallions, cilantro, lime juice and oil; season to taste with salt and pepper and serve over fish.
  5. Yields about 5 ounces of fish and a scant 1/2 cup of salsa per serving.
Tips & tricks
  1. Do not over-crowd fish in pan. Only cook as much fish as can fit in a single layer. Cook in batches, if necessary.
