What you need
  1. 1 pound of white button mushrooms
  2. 3 tablespoons of bacon fat
  3. 1 white onion small, finely chopped ( about 1/3 cup)
  4. 2 cloves of chopped garlic
  5. 1/2 teaspoon sea salt
  6. 1/4 teaspoon ground black pepper
  7. 1 1/2 tablespoons balsamic vinegar
  8. 1 teaspoon fresh parsley (chopped, optional)
What you do
  1. Wipe mushrooms with a slightly damp paper towel to clean them.
  2. Slice them in half and set aside.
  3. Place the bacon fat in a large skillet and place of medium-high heat.
  4. Allow the fat to melt, then add the mushroom, onion and garlic and cook about 8-10 minutes or until the mushrooms are tender, stirring frequently.
  5. Add the sea salt, pepper and balsamic vinegar to the pan and stir to coat.
  6. Cook another 2 minutes.
