Balsamic Bolognese over Zoodles

Description

The spicey kick with the balsamic twang gives this meal full of flavor with very few calories. 


Ingredients

Scale
  • 1lb lean ground turkey
  • 1 medium yellow onion, chopped or diced
  • 124oz jar Trader Giotto’s Rustico Pasta Sauce (or similar low sugar, under 50 calories per serving sauce)
  • 1 tbsp oregano
  • 1 tbsp minced garlic
  • 12 tsp red pepper flakes
  • 1 tsp olive oil
  • 1 cup diced white mushrooms
  • 1 14.5oz can fire-roasted diced tomatoes
  • 1/4 cup balsamic vinegar
  • Zoodles

Instructions

  1. SautΓ© the onion in the olive oil 2-3min.
  2. Add ground turkey.
  3. As turkey browns, add oregano, pepper flakes, garlic, and balsamic.
  4. In a separate saucepan, heat the marinara sauce, then add mushrooms and diced tomatoes.
  5. Cook for 3-4 minutes or until mushrooms are cooked.
  6. Combine both pans into one and let simmer 5-10 min on low heat.
  7. Serve over zoodles
